Ingredients: Chilli (30%), Lemongrass (20%), Shallot (12%), Garlic (11%), Salt (11%), Galangal (6%), Turmeric (5%), Kaffir Lime Leaves (5%).
Directions:
- Sauté 100g of RAYA Green Curry Paste with 200ml coconut milk until fragrant and the coconut oil begins to separate.
- Add 300g of sliced meat, tofu or vegetables and cook thoroughly.
- Add another 200ml coconut milk and bring to the boil.
- Add 350ml chicken or vegetable stock, then season with fish sauce and palm sugar to taste.
- Add sweet basil leaves, small aubergines and sliced fresh chilli.
- Serve with rice or noodles.
Serves 3–4.
